I got this recipe from Betty Yeow's cookbook but I made some changes as I found it too sweet. Hope you like it.

Eggless Nonya Kaya

8 -9 pandan leaves (cut & blend with 4 tbsp water)
200ml thick coconut milk (I used M & S low fat coconut milk)
125ml evaporated milk
135g sugar (I used 100g)
1/2 tsp pandan colouring (optional as I wanted a darker green colour)
a pinch of salt

Combine
1 tsp corn flour
1 tsp custard flour

Method:
In a non-stick sauce pan, combine both milk, sugar, 3 tbsp pandan juice and salt. Stir well. Cook on low heat for 5 minutes. Mix the remaining pandan juice with the flour mix; adding a little water to make a smooth mix. Add this to the milk mixture, stirring continuously. Add the pandan colouring, if using. Cook on low heat for another 10-15 minutes, stirring all the time. Take off heat when the kaya coats the back of the spoon thickly. Cool before storing in the fridge.

Note: The texture is like custard but it taste good. My children thought it was real kaya when I use it to make kaya toast. YUMMY! yummy

Looks very easy and low cholesterol.. wonder if anyone try this and what's your comments.
