Ingredients

3 carrots (diced)
1/4 cup cashew nut (raw)
10 red dates
15 straw mushrooms (canned) - taste better if you use dried ones
1.5 litres water

Method

Combined all ingredients and bring to a boil. Lower heat and simmer for 1 hour. Serve.

NB: you can add salt to taste (if required).

This soup is "sweet" due to the addition of red dates and cashews. You can adjust the amount of dates and nuts to you own liking.

thanks for this. Wink I think this can go into the slow cooker. 1 hr too long for my gas stove.

Hi Gina

If using a slow cooker, you may wish to first boil the soup for say 10 mins to bring out the flavour first and then put the lot into a slow cooker.

Is there dried straw mushrooms? Haven't seen them before. Can I get from the medical halls?

I don't know if it's available is Spore. My MIL got given a supply of it from a friend who came back from Vietnam. As for me, I simply used the canned variety.
