Makes 12 pcs

Ingredients
4 ripe red tomatoes(I used local ones)
1 tbsp Basil leaves
3 tbsp Parmesan Cheese(grated from a block)
50g Shredded Mozzarella Cheese
1 loaf of French Bagette(sliced)

Method
1. Diced tomatoes.
2. Toss with rest of ingredients except Mozzi cheese and bread.
3. Add 1.5 teaspoon of tomatoes mix on each bread.
4. Sprinkle some Mozzi cheese on top.
5. Toast in preheated oven 200C for 3 to 5 mins or when cheese is slightly
melted.
6. Serve immediately.

Hi Gina,
wanna know do i need to add olive oil to the bread ?Or the cheese already "act" as the oil ?

no oil needed. Its a very healthy way of eating bread and tomatoes.

If you wanna add olive oil, then brush a thin layer on the bread to toast it first. till its lightly brown.

then add the rest of toppings and toast again till the cheese melts.

Hi there gina! May I be so bold as to add one more little step to the bruschetta (which is probably my favorite food in the summer when the tomatoes and basil are so wonderful)?

I like to lightly toast my bread slices, rub with a halved garlic clove and then proceed with your wonderful toppings.

Love your forum - will have to spend DAYS looking things over around here - cheers

I am very lazy on some days. so I didn't do the olive oil, garlic rubbing method. Embarassed I learnt to make this after having it at a restaurant. It tasted so good that I ask for the Chef! loves

since then, I search for easy recipes from the net to try.
