Hollandaise sauce


ingredients:

- 200g cold butter
- 2 egg yolks
- juice of 1/2 lemon
- salt
- pepper

In a saucepan, place butter, egg yolks, lemon juice, salt and pepper.
Cook over VERY LOW HEAT beating continuously with a wire whisk.
Serve with fish, vegetables or Eggs Benedict.

u cook it obver direct heat??
my ex-boss taught me to use double boiling for this sauce...

Yes, over direct heat. I know the original recipe uses double boiling.
