2 cups of white beans
1 medium onion
1 large carrot
2 tablespoons of oil
salt and pepper

2-3 tablespoons of butter (40-45 gr.)
2 small cloves of garlic

2 tablespoons of oil
1 medium onion
1 tablespoon of Paprika (I think you could use curry powder)

I wash the beans and boil in 2-3 waters which I throw out every time. This is to eliminate the gas. A peel potato also eliminates the gas... it has to be discarded after boiling for a while... do not let it in the beans for too much.

Boil the beans with the chopped carrot and onion, oil, salt and pepper until beans are very tender.
Drain the liquid and while hot, add butter and mash with a blender until very creamy.
Place in a container provided with a lid (need to be covered and refrigerated). Mix in freshly grated or smashed garlic (taste the paste ... if you like more garlic then add). Level the bean butter.

In a frying pan, slice the second onion and on low heat let the onion get glossy but not fried. Mix occasionally. When the onion looks glossy, remove from heat and add paprika and mix until everything is red.

Spread all this over the bean butter, make sure all surface has some oil on it.
Refrigerate overnight before consuming.

If you like anchovies or salty fish ... this dish is just perfect for it.

Not at all :lol: I can take all the help I get... right now with Easter coming I am head over in things to do.
I vaguely remember some girls requesting recipe ...and can't remember which. So you see my head is in the cloud 99 right now. :lol:

Girls ... I guess any bean will do the job. Doesn't matter if they are red or green.

Speaking of which... I looked today for some green beans in the market and couldn't find any.

Vi...last year whilst on holiday in Melbourne...we had what they called a Bean Pesto...their version of it.
It was pureed white beans with olive oil,bits of anchovy,cashew nut and parmesan in it...beautiful!
We could not stop spreading it on the bread sticks they came with!

Is the same concept... only the recipe I gave was one made by my grandmother many times usually on fasting days.
You see, when we fast... 40 day prior to Easter we are not allowed any animal product. Not even fish.

But certainly you could add to it.

Hi Vi, is this similiar to hummus which is made from chickpeas? Do you normally eat this as a spread on bread? I tried hummus the first time last month when I was in Cyprus - love the taste of it! So I
