This recipe will be published in next month's Food and Travel Magazine. What I shared here is a modified version(due to copyrights to her)



Ingredients
3 pieces of Chicken Thigh(with skin and bone in)
1 tbsp Tumeric powder
1 tbsp Ginger juice(if not, use 1 tsp Ginger powder)
1 tsp salt
50ml Extra Virgin Olive oil

Method
1. Marinate chicken parts in the seasonings overnight.
2. Preheat oven to 240C for 15 mins.
3. Grill chicken in the oven for 15 to 20 mins till skin is crispy and golden brown.
4. Serve immediately.

Notes
This is non-spicy. If you want it to be spicy, pound fresh red chilli and mix with olive oil with a pinch of salt..drizzle over it..

Hi Gina: Thanks for this creative "loophole". I've always enjoyed your simple and clear recipes... and I'm glad I would not miss any of your newer ones. To tell the truth, I was a bit concerned when I read that KC is moving... but your posting here has allayed my fears. Once again, thanks.

KC has been eyed by many potential buyers! coffee but she is not for sale. Just that Pauline is helping me to host it under hers. So I don't have to trouble Prashant any more.

I meet with Pauline every week..to test out new recipes. She will do one, and I will modify it. So I can post here. That way, everyone gets the best of 2 worlds..2 recipes similar and works. One is copyrighted/printed, the other sits in KC. Wink

Hey Gina,

Thanks so much for this recipe!

I dont have an oven in my apartment, can I pan fry the chicken instead of Grilling it? Will it have the same results, maybe not so grilled?

you can pan fry with a little oil unless you have a frying pan that can go greaseless.

Gina, I added in 1 tbsp ginger powder instead of 1 tsp :shock: do you think the taste of the ginger will be too overpowering? I haven't used ginger powder before Embarassed

Also, do you pour the marinande over the chicken before grilling :roll:

Gina, the chicken turned out great. The ginger taste not too overpowering, still can taste the tumeric. This is a lovely recipe, the chicken is so moist and tender, thanks for the recipe Very Happy

Errr Pardon my ignorance..

Tumeric is found together with the curry powder an all issit?

And, is this the one used for pineapply rice?

I think it's due to the tumeric powder. My powder always comes out very yellow!
