BAKED ROSEMARY CHICKEN


ingredients:
8 chicken drumsticks with skin removed
1 egg (beaten lightly)
1/2 cup wholemeal (not flour)
1/2 crushed cornflakes
1/4 cup almond nibs
1/4 cup dried rosemary

Method:
1. Combine wholemeal, cornflakes, almonds and rosemary and place on a sheet pf aluminium foil.
2. Dip drumsticks into egg. Roll in coating mixture.
3. Place on a foil lined baking tray.
4. Cover with foil and cook in a preheated 180?C oven for about 30 minutes.
5. Remove foil and cook a further 10 minutes or until coating is golden brown.

Note(s):
1. Original recipe uses 2 egg whites instead of 1 whole egg, 1 cup of wholemeal breadcrumbs instead of ingredient (3) and (4), and also fresh rosemary.
2. You may wish to marinate the chicken in advance. I just rub some salt and crushed garlic and also a little sugar on it.

I've edited your recipe on ingredients to remove the 1, 2, 3..can be quite misleading as the numbers are next to another set of numbers which signify quantity/amount. Sekali people read as 1.8 Chicken drumsticks..!

you can get wholemeal from Cold Storage or Jason's Marketplace. As for Almond nibs, its actually almond sliced into little sticks. You can get this from Phoon Huat.

Hi mingle,
I bought the wholemeal bran from a baking supplies shop. Take note that this is not wholemeal flour. I reckon you might be able to find this at health stores or organic stores too. You will be able to find almond nibs at most grocery stores or supermarkets, under baking supplies section. It is sold in packets.
