Beer Battered Fish(recipe and pic)

Ingredients:
20 pcs of fish(I used Smelt Fish)
50 g plain flour
50 g corn flour
70ml Beer(any brand will do)
4 egg whites

Method:
1. Beat egg whites until stiff.
2. Fold in rest of ingredients.
3. Dip fish in batter and deep fry until golden brown.

Serve immediately..great with Mayo or Tomato sauce

Gina,
I'll do beer batter shrimp and use one of your recipes... you got two (one is this one and the other is Beer Batter Chips under 'Quick and Easy'). Which one the crust is lighter? TIA Razz

Thanks Gina, this recipe is fantastic! your recipe's good enough for my 2 lbs of shrimps.
The crust turned out extremely light, like air Very Happy It even puffed up like balloon! Read it somewhere the beer+flour mixture (exclude the egg white) should be prepared at least 2 hrs ahead but not over 24 hrs, so I followed... not sure if it helps the crust so super airy... and zero beer taste Razz (unlike the pre-mix from box which is bad).

its the egg white beat till stiff that did the trick. My mom learnt this from a cooking class by the Chef Sin Leong donkey years ago. I used to remember watching her beating the egg whites by hand..so tiring. she didn't use beer..just egg whites.

i will like to ask what kinda fish is suitable for deep frying. i am a cook idiot. :cry:

i tried shark meat last week but turned out kinda tough. i m hoping for soft melt in the mouth texture.

do advise. thanks! Wink
