This recipe is sort of by estimation. My mum just adds the ingredients according to how big her pot is! So, i may not give the exact measurements to it.
But the good thing is that its very very easy to cook. Just dump all the ingredients in one pot and boil till fragrant and ingredients have turned soft!
What you need:
1 pack fresh sea coconut(this is available in the markets, some vegetable sellers sell them, will try my best to take a pic of it the next time my mum buys it, but it wun be so soon cos she's on 'honeymoon' with my dad)
1 cup dried longans(my mum recommends using those good quality ones, which are in whole form and brown in colour, she says there are some that are very dark brown and these are not so good)
3/4 cup red dates(pitted!)
Mu-er(white snow fungus) (this one, i cannot estimate how much... just put in accordingly, if you like it, can put more!)
Rock sugar( add in accordingly to your taste preference!)
What to do:
Remove the light brown skin off the sea coconut, it should slide off easily for those soft ones, slice the sea coconut into about 5~8mm thick slices.
In a large pot, boil water(~1500ml, depending on pot size). Put in sea coconuts that are harder to cook first(this is to soften them first).
Put in the rest of the ingredients after about 10 minutes.
Once the water has come to a boil again, lower the flame intensity and continue to let it boil till the soup turns light brown in colour and taste flavourful.
Notes:
Frankly, there is no hard and fast rule to the making of this dessert. So, its really up to you to estimate how much ingredients you need. If need be, add more longans and red dates for better taste!
We like to cook a big pot, then keep it in the fridge because my family finds this dessert taste better chilled. But you can enjoy it hot if you like!
Ask the vegetable seller to choose a packet of sea coconut that are softer, cos soft sea coconuts taste better and are much easier to cook!
And yes, this dessert is cooling, great for our crazy hot weather in Singapore and to 'rid heatiness'.

it is really an easy thing to make just dump everything in the pot and VIOLA ...

Will I be able to find fresh sea coconut in supermarket? Or only available in wet market? |

I think certain supermarkets do stock fresh sea coconut... like Shop and Save and perhaps certain NTUCs... But yes, the market definately stocks it.  |

I tried making this dessert, and love it especially when it's cold.
Couldn't find the fresh sea coconut though, so bought the canned ones instead. |
