This is our family's favourite soup. Especially for Pa. In his sick days, he can eat 2 bowls at one go. This was something Ma learnt from watching Cooking programs on TV and she improvised by using superior chicken stock.
Now a dish we served on a regular basis.
2 cans of Creamy Corn Kernels
1 litre Chicken Stock
2 eggs , beaten
salt to taste
3 tbsp potato starch mixed with 3 tbsp water
1. In a sauce pot, add chicken stock, creamy corn to boil.
2. Once it starts boiling, add starch mixture. Continue to stir till the soup thickens. Add salt to taste.
3. Drizzle in the beaten eggs, turn off the heat. Give it a good 2 stirs and its ready for serving.
