10-12 fresh green chillies, seeded
3 stalks of lemon grass
1 tbsp chopped galangal(blue ginger)
1 onion, chopped
3 cloves garlic
1 stalk coriander (roots and stems included), chopped coarsely
1/2 tbsp ground coriander
1 tsp cumin powder
1/2 tsp salt
1 to 2 tbsp oil
100 ml corn oil for frying
1. Blend all the ingredients in an electric blender until smooth.
2. In a wok, add corn oil and paste to stir fry till it turns dark green in colour.
3. Cool completely before storing in a glass jar.
