I created this and named it Prosperity Rolls as it has all the basic colours for the prosperity that is symbolic with Chinese culture. The rolls are wrapped in beancurd sheet and stuffed with home made Mock Char Siew. Pan fry over medium heat till it crisps, then served warm, it has become a yearly ritual for me to prepare this for the first day of the lunar New Year celebration with in-laws.




Ingredients
200g mock char siew
a small bunch of coriander leaves
1 carrot, shredded
100g bean sprouts, blanched quickly
1 large piece of bean curd sheet, cut into 14cm by 20cm
some water

Method
1. Cut mock char siew into long strips.
2. Dip bean curd sheet into water and place it on a plastic cutting board
3. Place mock char siew, shredded carrots, cooked beansprouts and coriander leaves on the far end of the bean curd sheet.
4. Roll up to seal.
5. Heat up frying pan with a little corn oil and add the roll to pan fry till golden brown and crisp.
6. Remove and cut and serve with sweet vinegar chilli sauce.

SWEET VINEGAR CHILLI SAUCE

Ingredients
50ml chilli sauce
50ml tomato ketchup
10ml chinese rice vinegar
3 tbsp sugar
2 tbsp toasted sesame seeds

Method
1. In a cup, add vinegar and sugar together. Stir till the sugar dissolves.
2. Add chilli sauce and tomato ketchup to mix.
3. Stir till it is well mixed.
4. Sprinkle toasted sesame seeds on top before serving.

Hi Gina

My MIL is a vegetarian and this year is my first year preparing reunion dinner.

May I ask what can i replace with for the mock char siew as she doesnt like it?

you can use other kinds of mock meat that is flavored or fried. or else it has nothing inside.. :(

Oh dear...she doesnt like any of the mock meat. Think i hv to look out for other vegetarian dish.
