Fried Kway Teow snack

Hungry? Want something quick but not heavy? This is what I do.

Ingredients
1 packet ready to fry kway teow (or Ipoh hor fun). Usually from Unicurd or some other local company.
Your favorite oil
Your favorite soy sauce
Freshly boiled hot water
Chopped spring onions

1. The kway teow from the packet will be hard and stuck together. Not great to fry straight away. Empty it into a bowl and pour hot water over it.

2. While the kway teow is loosening, fire up a wok at high flame. When hot, pour in your favorite oil to the amount you desire. Just watch those calories.

3. Drain the kway teow over a colander and immediately toss it into the hot wok of which by now the oil is hot.

4. Pretend you are the hawker doing business in the food court nearby. Toss and stir the kway teow around. Add a splash of the soy sauce. This will be very brief. About 1min.

5. Scoop the kway teow out of the wok and into a plate. Sprinkle with the chopped spring onions. Enjoy.

Notes: You can substitute the kway teow with cut up flat noodles like chee cheong fun. Just spread them out. They are more fun because you can have them as thick as you want them to be.

Tossing in canned tuna or chopped luncheon meat has worked for me too. In this case, cut down on the soy sauce.

Dunno but I always make ths in a hurry just to fill up. Wife doesn't like its plain soy sauce flavored taste.

this is how i cope with tight packed fresh "banh pho"/fresh kway teow?
microwave for a couple minutes. voila.
